Kombucha is fermented tea based beverage. During fermentation kombucha beverage produce different types of organic acids and probiotics that very beneficial for digestive system.
The main ingredients of kombucha are; water, tea, sugar and kombucha cultures. Kombucha cultures consist of certain amount of kombucha from previous batch - also called backslop- and SCOBY (Symbiotic Community of Bacteria and Yeast).
On top of the main four ingredients we add different sub ingredients to flavor our kombucha. More information about flavoring ingredients can be found on 'Flavors' section above.
Every commercial kombucha contain trace amount of alcohol due to fermentation. This alcohol level is not exceed 0.5% ABV in order to sell the kombucha as a soft beverage. According to TTB regulations everything below 0.5% ABV consider as non-alcoholic beverage. Boochman Kombucha is a non-alcoholic soft kombucha.
Our kombucha maintain high quality for two months in the fridge without opening it. Once the growler opened, the growler cap should close tight all the time while storing in the fridge and must avoid temperature fluctuations.
We do not pasteurize our kombucha to maintain it's healthy properties (probiotics and organic acids). In other words, Boochman Kombucha is alive and contain full of life in every single drop.
Unpasteurized kombucha carries living properties in it which means the fermentation never stops after kombucha flavored or bottled. When kombucha bottle stored in the fridge ( or below 40 degree) fermentation slows down and that helps to prevent excessive CO2 production. If you leave kombucha above 40 degree or in the room temperature, the drink will also continue to ferment and create more carbon dioxide (CO2), and that can cause the bottle of kombucha to explode when you open it and my show negative effects on product quality.
Boochman Kombucha is a non-alcoholic probiotic beverage so it is safe for kids. Some studies suggest that probiotics may be good for children. However, check with your pediatrician before giving probiotic food or supplements to your child.
Yes. Because kombucha is a tea based beverage, there is small amount of caffeine naturally occur in the tea. There is 26 mg of caffeine in 8 fl oz regular black tea. Although in our 8 fl oz kombucha there is 17.3 mg of caffeine. Because we use two different types of black tea ( Oolong and Hemsin ) the caffeine amount slightly changes at the end product.
